Chef de Partie- The Hardiman
Responsibilities:
- Prepare, cook, and present dishes according to standardized recipes and specifications, maintaining the highest quality of taste, texture, and appearance.
- Ensure that all food preparation and cooking processes are in line with health and safety regulations.
- Assist in developing and updating menus, incorporating seasonal and local ingredients whenever possible.
- Monitor portion and waste control to maximize food profitability without compromising quality.
- Collaborate with the kitchen team to maintain a clean and organized work environment.
- Manage a specific section within the kitchen, such as sauces, grill, pastry, or vegetables, and oversee its smooth operation during service hours.
- Train and supervise junior kitchen staff, including Commis Chefs and Kitchen Assistants, providing guidance and support in their professional development.
- Coordinate with other sections and communicate effectively to ensure efficient workflow and timely delivery of dishes.
- Monitor stock levels and assist in the ordering process to maintain adequate supplies while minimizing waste.
- Ensure proper equipment usage, maintenance, and cleanliness in your section.
Qualifications and Skills:
- Proven experience as a Chef de Partie or similar role in a reputable hotel or restaurant.
- Strong knowledge of various cooking techniques, ingredients, and cuisines.
- Excellent organizational and time management skills, with the ability to prioritize tasks effectively.
- Leadership abilities, including the capacity to train and mentor junior team members.
- Ability to thrive in a fast-paced, high-pressure environment.
- Knowledge of health and safety regulations and best practices in a kitchen setting.
