Assistant Sommelier

Dromoland Castle is currently recruiting for an Assistant Sommelier. As Assistant Sommelier, you will work closely with the Head Sommelier to deliver an exceptional wine service across the hotel's fine dining restaurant and bars. You will assist in developing the wine program, managing the cellar, training the team, and ensuring guests enjoy a memorable and tailored experience. Overview of the Role:

• Support the Head Sommelier in overseeing the wine program, list development, and pairings
• Provide knowledgeable, warm, and professional wine service to guests
• Assist in training and developing the front-of-house team in wine knowledge and service standards
• Maintain cellar organisation, stock control, and supplier relationships

The Ideal Candidate:

        Previous experience in a sommelier or senior wine service role, ideally within a fine dining or luxury setting

• Passion for wine, with an excellent understanding of regions, producers, and food pairings
• Strong communication and interpersonal skills
• Organised, detail-focused, and eager to develop and mentor others
• A positive and a hands-on approach
